Whole Grain Pancakes

  • 1/4 cup chopped pecans
  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/8 cup canola oil
  • 1 large egg
  • 1/4 cup oatmeal
  • 1/4 cup wheat flour
  • 1/2 cup bran


    1. Combine dry ingredients in a large mixing bowl; set aside.
    2. In separate bowl combine all the liquid ingredients. Whisk until thoroughly mixed. Add to dry ingredients; whisking until smooth. If batter is too thick add a little milk or water.
    3. Cook on medium high in greased skillet. Serve with butter and syrup or fresh fruit and yogurt!
