Irish Potato Soup

  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon salt
  • 1 teaspoon chicken bouillon granules
  • 1 cup warm water
  • 1/2 cup whipping cream
  • 1 1/2 cup milk
  • 1/4 cup butter
  • 1 cup celery
  • 1 medium onion
  • 3 large potatoes


    1. Melt butter in a 2 quart saucepan and saute onion and celery until tender. Add potatoes, bouillon, and water and simmer until potatoes are fully cooked stirring occasionally.
    2. When potatoes are fully cooked, use a hand masher or fork to gently mash some of the potatoes; thickening the soup. Add milk and cream; simmer but do not boil. Salt and pepper to taste and serve with cheese.
