Rasberry Bars

  • 1 1/8 cup sugar
  • 3 count eggs
  • 1/2 cup bread crumbs fresh
  • 1 cup preserves raspberry seedless
  • 1/2 teaspoon baking powder
  • 3 cup flour cake
  • 1 teaspoon vanilla extract
  • 2 count butter stick of


    1. Preheat oven to 425 degrees. Cream together the butter and sugar. Add the egg yolks, reserving the egg whites in a separate bowl. Add the vanilla and baking powder. Add the flour to the batter and combine well. With your fingertips, spread this batter evenly into a 9- by 13- inch pan. Cover evenly with the preserves, sprinkle with breadcrumbs, then with the pecans.
    2. Beat the egg whites, salt and sugar to a stiff consistency. Spread the meringue, over the mixture and then sprinkle pecans over the top.
    3. Bake for about 45 minutes, then remove and cool. Cut into squares.
