Irish Apple and Barley Pudding

Yummy dessert - fun to make!


  • 2 cup water
  • 1/4 cup heavy cream
  • 1 1/4 teaspoon cinnamon
  • 1/3 cup brown sugar
  • 1 1/2 pound apples peel, cored and sliced
  • 4 tablespoon pearl barley


    1. Boil barley in water while you peel and slice the apples (about 10 min.)
    2. Add apples to the barley and continue to boil for 15 more minutes.
    3. Food process or blend apples and barley.
    4. Return puree mixture to saucepan and continue to cook.  Add brown sugar and cinnamon.
    5. Serve with 1 T. heavy cream per serving.
